ALMOND BANANA BREAD
Almond milk gives this
almond banana bread a lovely level of moisture with a nutty bite from slivered
almonds.
INGREDIENTS

2 cups all-purpose flour
·
1/4 teaspoon baking powder
·
1/2 teaspoon baking soda
·
1/2 teaspoon salt
·
1/4 teaspoon cinnamon
·
1 stick unsalted butter, 4 ounces, melted
·
2/3 cup granulated sugar
·
2 large eggs, room temperature, slightly beaten
·
3 ripe bananas, mashed
·
1/4 cup unsweetened almond milk
·
1/2 cup slivered almonds, toasted
INSTRUCTIONS
1. Butter
a loaf pan and line the bottom with parchment paper.
2. Preheat
oven to 350°F/180°C.
3. To a
mixing bowl sift the flour, baking powder, baking soda, salt and cinnamon.
4. To
another bowl cream the butter and sugar, beat until combined. Beat the
eggs into the butter and then add and mix in the mashed banana.
