For the Thai Noodle
Soup:

1 Tablespoon Oil

1 Tablespoon Ginger
and Garlic chopped fine or paste, homemade recipe or store bought

4 Tablespoon Thai Red Curry Paste
·
400 milliliter (1 can
or 13.66 fluid ounces) Coconut Milk
·
800 milliliter (almost
one carton pack or 27.05 fluid ounces) Veg Broth
·
2 Tablespoons Fish Sauce
·
1 Teaspoon Brown Sugar
·
150 grams (5.30
ounces) Egg Noodles,
Chow/Low Mein Style Chinese Noodles
To Serve:
·
Chopped Cabbage
·
Sliced Spring Onions
Garnish:
·
Lime Juice
·
Red Chili Flakes
·
Fresh Green Chili cut
·
Crushed Peanuts
·
Fresh Cilantro
·
Green parts of the
Spring Onion cut
Instructions
1.
Heat up a pan and add
the oil. Add in the ginger and garlic and stir-fry a little bit on a higher
flame.
2.
Next, add the red
curry paste and stir-fry for 2 minutes on high heat.
3.
Reduce heat, then pour
in the coconut milk and follow suit with the broth.
