Spinach Dip Crescent Bites
Ingredients

2 T. butter
·
1 c. chopped green onion (about 1
bunch, white & green parts)
·
2 cloves garlic, minced
·
1 c. chopped red bell pepper
(about 1 large pepper)
·
10 oz. frozen chopped spinach,
thawed & well drained
·
8 oz. cream cheese
·
1/2 tsp. salt
·
1/4 tsp. black pepper
·
1/2 tsp. paprika
·
1/8 tsp. crushed red pepper
·
1/3 c. mayonnaise
·
1 T. fresh lemon juice
·
1/2 c. chopped water chestnuts
·
1/2 c. shredded Parmesan cheese
·
2 packages Crescent Rolls
1. Melt butter in a saute pan
over medium heat. Add green onion, bell pepper, and garlic; saute until limp,
about 3 to 4 minutes.
2. Add spinach and cream
cheese. Stir mixture and blend in cream cheese until the cream cheese is
melted. Stir in salt, pepper, paprika, crushed red pepper,
mayonnaise, lemon juice, water chestnuts, and Parmesan. Remove from heat.
3. Unroll one package of
crescent rolls and place on a baking sheet. With your fingers, gently press the
seams together to seal them. Spread the spinach mixture evenly over the
crescent roll dough, leaving about a 1/2-inch border along the edges.
